Limbu pani


Fresh lime juice is one of the most refreshing drinks in the world. You can make it with still or sparkling water, or use it as the base for a mojito!

5 limes (1 per serve)

10 teaspoons of raw sugar

Half a teaspoon of finely grated ginger (optional)

Sparkling water (optional)

Mint leaves

Place sugar in a bowl and add half a cup of boiling water, and the ginger, if using.  Stir until sugar is dissolved.  Squeeze limes into a jug and add the sugar mixture.  Strain into another jug, and add still or sparkling water to taste (around a litre).  Tear up a handful of mint leaves and stir into juice.

Easy morning chai


There is nothing like a good cup of tea.  This lovely chai is simple and fragrant and will cheer you up no end.  For one cup of tea, you will need:

Half a cup of water

Half a cup of skim milk

Half a teaspoon of fresh ginger, peeled, washed and finely grated

1 cardamom, crushed in a mortar and pestle

1 heaped teaspoon of English breakfast tea

Combine all ingredients in a small pan and bring to boil.  After this, turn off heat and leave to brew for a few minutes.  Strain into a cup and add honey or raw sugar to taste.
