Easy brown lentil lunch


This is my perfect weekday lunch, spicy and delicious but still a very healthy, vegetarian, oil-free meal.  The lentils on their own come in at under 200 calories so it's also perfect for anyone doing the 5:2 diet or otherwise trying to make up for drinking too much champagne on the weekend (me). 

1 400g tin of brown lentils

1 tablespoon of tomato paste

2 teaspoons of bottle masala

half a teaspoon of salt

a squeeze of fresh lemon juice or a splash of vinegar

lots of salad to garnish – red onion, cucumber, radish, spinach and rocket

Rinse the lentils in a strainer.  Place in a small saucepan, add about a third of a cup of water, the tomato paste, salt and bottle masala and stir.  Bring to a quick boil and then turn down heat, cover and gently simmer for 15 minutes or so until reduced, stirring occasionally.

Place on a plate or on some crusty white bread and garnish with lots of greens and sliced raw vegetables, salt and pepper.
