Fresh lime juice is one of the most refreshing drinks in the world. You can make it with still or sparkling water, or use it as the base for a mojito!
5 limes (1 per serve)
10 teaspoons of raw sugar
Half a teaspoon of finely grated ginger (optional)
Sparkling water (optional)
Mint leaves
Place sugar in a bowl and add half a cup of boiling water, and the ginger, if using. Stir until sugar is dissolved. Squeeze limes into a jug and add the sugar mixture. Strain into another jug, and add still or sparkling water to taste (around a litre). Tear up a handful of mint leaves and stir into juice.
