My vindaloo masala combines hand roasted cumin seed, red chilli powder, turmeric, cardamom, cinnamon, bay leaves, cloves and peppercorn.
SPICE MAMA’S BOTTLE MASALA
My bottle masala combines all above ingredients with the addition of roasted sesame seed, poppy seed, coriander seed, szechuan pepper, shah jeera, chana dal, saffron, paprika, nutmeg, allspice and star anise.
My freshly made spice blends take all the guess work out of flavouring your cooking with spices and are so easy to use.
In your pantry...
Rice (the best aged Basmati rice you can get)
Coconut: cream and milk (In Australia, Ayam brand is the best: look for a brand that doesn't contain any added ingredients), dessicated coconut
Tomato: tomato passata, tomato paste, tinned tomatoes
Flours: besan flour, self raising flour
Oils: ghee, coconut oil (unrefined), peanut oil, olive oil
Other: tamarind paste, dried mint, salt, sugar
In your shopping trolley...
Aromatics: red onions, spring onions, ginger, garlic, green chillies, curry leaves, coriander leaves, mint leaves, lemon and lime
Seasonal vegetables and some basic staples: potatoes, tomatoes, cucumber, spinach
